CookSafe Project

CookSafeIn response to the requirement contained in the new EC Hygiene Regulations that all food businesses develop and implement a documented food safety management system Aberdeenshire Council was awarded funding from the Food Standards Agency Scotland to provide support to businesses within the catering sector.

This support is free of charge and aimed at assisting businesses in progressing towards compliance with the new regulations..
It comprises the following components:

  • A one-day CookSafe seminar/workshop presented by Hospitality Training in partnership with Aberdeenshire Council Environmental Health Service.
  • The provision of a CookSafe manual designed to be suitable for use in the majority of catering businesses, although each will require to adapt it to suit their own particular operations and activities.
  • Pre-arranged, one-to-one, on site mentoring visits with the training presenters and/or the local officers to assist in the practical development of a satisfactory food safety management system.

Year 1

of the project has been running since September 2004 and 170 food businesses have been targeted and offered the support package.

Year 2

of the project will began in September 2005 and 290 food businesses are due to be targeted. Invitational letters and a questionnaire will be sent out to these targets for completion and return as acceptance of the support.

CookSafe Promotional Material

In addition to the free support offered the Food Safety Section has produced a range of promotional material which are provided to all participating businesses as an added means of advertising the project.

The CookSafe manual is also available on a CD Rom to those businesses who wish to develop and maintain their Food Safety Management System on electronic format.

This e-learning version includes a food safety refresher training programme and record sheet templates in a range of file formats which can be easily downloaded for use.

HIPPO logoThe HIPPO logo present on the promotional material was created to refer to the team of food enforcement officers, trainers and support officers from the Environmental Health Service who developed the CookSafe project support package offered by Aberdeenshire Council
